Bacon, Spinach, and Caramelized Onion Pasta

INGREDIENTS

  • 6 ounces of whole wheat penne pasta

  • 4 ounces of chopped bacon

  • 1 large yellow onion diced

  • 2 tablespoons of butter

  • 2 tablespoons of brown sugar

  • 1 cup generousof spinach

  • salt, pepper, garlic powder to taste

  • 1/2 cup of Parmesan cheese sprinkles

DIRECTIONS

  1. Boil pasta in salted water until al dente

  2. In a large skillet, add your bacon and cook for 7-10 mins until bacon is crispy

  3. In that same pan, and some butter, sugar, spices, and YUMYIN; sautee until the onion becomes tender, and bacon starts to crisp up.

  4. Once the pasta is done, drain it loosely, but leave a tiny amount of water and add it to the skillet with the bacon, and YUMYIN mixture.

  5. Mix in the spinach and stir until tender

  6. Sprinkle with Parmesan before serving.
