Pan Fried Brussels Sprouts with Pancetta

Adapted via Food52.com • Serves: 8 to 12


  • 2 lbs brussels sprouts, halved

  • 4 oz pancetta, chopped

  • 4 tablespoons olive oil

  • 1/3 - 1/2 jar YUMYIN

  • 2 cloves garlic, smashed

  • 2 sprigs thyme

  • 1-2 tbsp lemon juice

  • Salt and pepper

  • 1/2 cup grated Parmesan (optional)


  1. Add olive oil to a large pan over medium-high heat

  2. Add the smashed garlic and pancetta, let cook until just slightly browning

  3. Place brussels flat side down in the plan, fit as many as you can then add the rest even if they don’t sit flat side down. Let them sit untouched for 5-10 minutes, you want golden cripsy look.

  4. Add YUMYIN and Thyme, stir trying to get the cooked sides up and uncooked sides down

  5. Squeeze lemon juice into pan, deglaze the pan as well as you can

  6. Salt and pepper to taste

  7. Enjoy!
