Note: For this recipe, a mandoline is highly recommend (if not required).

  • 1/4 cup raisins
  • 1/2 cup water
  • 1 head green cabbage, cored
  • 2 tsp salt
  • 1/2 cup YUMYIN
  • 3 large carrots
  • 1 tsp Horseradish
  • 1/4 cup mayo
  • 2 tbsp Distilled vinegar
  • 1/4 tsp Celery seed
  • 1/4 tsp Black pepper

  1. Immerse raisins in water, let them sit for 1+ hour to fully hydrate
  2. Thinly shave the cabbage on the mandoline, add to a large bowl and salt, this draws out the water. After 30 minutes drain the bowl of water pressing the cabbage to get all the water out
  3. Grate the carrots, the thinner/smaller the better, add to cabbage bowl
  4. Minced the raisin, add to cabbage and carrots
  5. Add the YUMYIN, mayo, vinegar, celery seed, and pepper, mixing well to combine evenly.
  6. Serve immediately to enjoy the crunch of the cabbage
