Lemon Caper Caramelized Onion Dressing

  • 2 medium lemons (or 1/2 cup lemon juice)

  • 3 tablespoons YUMYIN

  • 2 tablespoons Dijon mustard

  • 2 tablespoons drained capers, finely chopped

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon sugar

  • 1/4 cup extra virgin olive oil

  1. Juice lemons into a bowl keeping seeds and membranes seperate

  2. Add rest of ingredients to bowl and mix well

  3. Add the lemon segments and toss gently to coat them without breaking them up. Use straightaway or chill in the fridge, covered, for up to an hour.
